چکیده
In this study, researches were carried out on the protease enzyme activity of Jasminum officinale Linn. flower which grows naturally in Muğla and its surroundings. addition, fragrance components content jasmine determined. It was aimed to be used perfume making based harmony white with other flowers concept note. Protease purified from J. using TPP (Three Phase Partitioning) method. Optimal pH optimal temperature for enzyme, Km Vmax values casein, azokazaein, gelatin, hemoglobin, azoalbumin substrates SDS-PAGE check purity officinale.
